Η Ειρήνη Φαφαλιού είναι Καθηγήτρια στο Οικονομικό Τμήμα του Πανεπιστημίου Πειραιώς. Έλαβε το διδακτορικό της  (in Social Sciences) από το Πανεπιστήμιο του Leicester, UK (2001), το μεταπτυχιακό της δίπλωμα (in Manpower Studies & Industrial Relations) από το Πανεπιστήμιο του Manchester, UK, και τον προπτυχιακό τίτλο σπουδών της (in Business Administration) από το Πανεπιστήμιο Μακεδονίας, Θεσσαλονίκη.

Στο Πανεπιστήμιο Πειραιώς διδάσκει, σε προπτυχιακό επίπεδο, Βιομηχανική Οικονομική Ι (7ο εξάμ.), Βιομηχανική Οικονομική ΙΙ (Ανταγωνιστικότητα & Βιομηχανική Πολιτική) (8ο εξάμ.) και Επιχειρηματικότητα Ι (5ο εξάμ.). Σε μεταπτυχιακό επίπεδο διδάσκει Επιχειρηματικότητα & Μάνατζμεντ Καινοτομίας, Μάνατζμεντ, Ηγεσία, Αλλαγή, καθώς και Επιχειρηματικότητα και Καινοτομία στους Οργανισμού Υγείας. Δίδαξε στο Πανεπιστήμιο Μακεδονίας και ως προσκεκλημένη Καθηγήτρια σε Πανεπιστήμια του εξωτερικού.

Τα ερευνητικά της ενδιαφέροντα εστιάζονται στις σχέσεις επιχειρήσεων και αγορών, στη δημιουργία νέων επιχειρήσεων, στη μεταφορά τεχνολογίας και στην επιχειρηματική ηθική. Έχει εποπτεύσει μεγάλο αριθμό μεταπτυχιακών διπλωματικών, ενώ παρακολουθεί ως supervisor ή μέλος τριμελούς ικανό αριθμό υποψηφίων διδακτόρων.

Έχει δημοσιεύσει άρθρα σε έγκριτα επιστημονικά περιοδικά όπως: International Advances in Economic Research, International Journal of Economics and Business Research, International Journal of Entrepreneurship and Innovation Management, International Journal of Social Economics, Marine Policy Journal, Production Planning and Control Journal, International Journal of Value-based Management, International Journal of Economic Research, The Journal of World Economics Review, Global Business & Economic Anthology. Έχει συγγράψει και επιμεληθεί μία σειρά βιβλίων σε θέματα Βιομηχανικής Οργάνωσης, Βιομηχανικής Πολιτικής, Μικρών και Μεσαίων Επιχειρήσεων και Επιχειρηματικότητας.

Έχει συμμετάσχει με εργασίες της σε περισσότερα από 60 διεθνή συνέδρια και είναι κριτής σε επιστημονικά περιοδικά και μέλος διεθνών επιστημονικών συμβουλευτικών επιτροπών. Έχει συμμετάσχει ως ερευνήτρια σε μεγάλο αριθμό διεθνών και ευρωπαϊκών προγραμμάτων και είναι ιδρυτικό μέλος της Μονάδας Καινοτομίας και Επιχειρηματικότητας του Πανεπιστημίου Πειραιώς. Είναι μέλος του Δ.Σ. των Future Leaders και του European Business Mentors Network. Επίσης, είναι mentor σε startups στο Ekkinisi Lab του ΣΕΒ και στην Πρωτοβουλία Blue Growth Maritime Piraeus.
